The medinas get the attention, and they earn it. Fez el-Bali is the largest car-free urban area in the world, a medieval city that has been continuously inhabited for over a thousand years and still functions more or less as it always has. Getting genuinely lost in it, past the point where the tourist infrastructure thins out and the tanneries and the metalworkers and the bread ovens take over, is one of those disorienting, irreplaceable travel experiences that no amount of research quite prepares you for.
But Morocco is also a mountain country. The High Atlas rises to over 13,000 feet and cuts across the middle of the country in a way that creates dramatically different worlds on either side. The Berber villages along the trekking routes above Marrakech carry a culture that is distinct from the Arab-influenced imperial cities and largely invisible to visitors who stay in the valley. The road south through the Draa Valley to the Saharan dunes at Merzouga passes through a landscape of kasbahs and palmeries that shifts every hour in a way that makes the journey as significant as the destination.
Then there's the Atlantic coast, which most Morocco itineraries treat as an afterthought. Essaouira is a wind-battered, blue-and-white fishing port that has been quietly attracting artists and musicians for decades without losing the working harbor at its center. The Souss-Massa coast further south is a serious birding destination that almost nobody outside the ornithology community knows about. DAR AHLAM
A 19th-century Kasbah hidden in the palm grove of Skoura, in what was once a sultan's private hunting ground, with 13 suites and a private villa all furnished with the kind of attention that accumulates when a French theatre producer decides to restore a Moroccan fortress. Each meal is served in a different location within the two hectares of gardens, so guests never repeat the same view or experience. Dar Ahlam also operates its own private desert camp for overnight stays in the Sahara, which means clients staying here can complete the full arc, kasbah to dunes, without changing operators.
DAR AHLAM DUNES CAMP
Beyond the walls of Dar Ahlam lies the full mystery of the desert. Their private camp puts you among the golden dunes for a night under the stars in a luxury tent, with the same standard of food, service, and theatrical surprise that defines the kasbah itself. LA MAISON ARABE
Born in the 1940s as the first restaurant in the medina open to foreigners (Winston Churchill, Ernest Hemingway, and Rita Hayworth were among the early guests). It was restored in the 1990s to become the first boutique riad-hotel in Marrakech. Thirty-seven rooms in the Bab Doukkala neighborhood, a short walk from the Jemaa el-Fna square, with three restaurants, a cooking school that was the first in Marrakech, and a traditional hammam spa. The kind of property that has earned its reputation over decades rather than marketing cycles.
